OBJECTIVE:
- Enhance complexity and contribute to a well balanced wine.
- Increased body or full mouth feel.
- Increased flavour or aroma complexity of wines.
APPLICATION:
The method and quantity of oak chips will vary in accord with its application. Oak chips may be used during the fermentation of a wine, or during aging. They may also be distilled with the wash or wine so the oak overtones carry over with the distillate. An experimentation period is highly recommended before the use of this product in winemaking or aging.
RECOMMENDED DOSAGE:
French Oak Chips
2-4 g / litres ↔200 – 400 g. / 100 litres ↔ 450 – 900 g. / 225 litres
Aging of distilled spirits - 5g / litre
The recommended dosage for the aging of spirits is 5g per litre but one should accompany the aging process of the spirit as this can take place quite fast. Pay special attention to the colour of your spirit, it may precipitate after aging, let it do so before bottling or else it will precipitate in the bottle.
GENERAL RECOMMENDATIONS:
